KDM rice (Khao Dac Mali; Combodia pronunciation), sometimes known as Cambodia fragrant rice, is a long-grain variety of fragrant rice that has a white and slender shape, a nutty aroma and a subtle pandan.
It is soft, a little sticky in texture with a strong aroma when cooked, though it is less sticky than other kinds of rice as it has less amylopectin, rice still remains being sticky even when cooled down.
